Ingredients:
Fish
Salt
Oil for deep-frying
Sauce:
2 tbsp of light soy sauce
2 tsbp of oyster sauce
3 tsbp of water
1 tsp of chicken stock powder
1 tsp of sugar
a dash of sesame oil
Garlic (sliced)
Ginger (sliced)
Liberal amounts of green onions (sliced) and cilantro
Method:
Firstly, rub the sides of the fish with salt to ensure the fish doesn't stick to the wok while frying. Deep fry the fish in hot oil. Next, leave just enough amount of oil in the wok for frying the garlic and ginger till crispy. Remove from wok. Next, prepare the sauce mixture. Leave about 1 tsp of oil in the wok and pour the mixture in allowing to boil. Place the green onions and cilantro on top of the fish and pour the hot sauce mixture on top. You may also serve the sauce separately and use it as a dipping sauce which I personally prefer.
