This simple and fragrant stir-fry recipe was created totally on the fly - I literally did not know what I was making even as I placed the pork cubes into the wok! Anyway, at first I was visualising a pork with salted vegetables stir-fry but I did not read the label of the salted vegetables packet properly and bought the wrong thing. So I abandoned the idea and settled on this easy and tasty stir-fry. This would be perfect for week nights or just when you want to spend as little time as possible in the kitchen yet have a tasty and satisfying meal. I flavoured this stir-fry with some red chilli peppers, and some Japanese condiments I had in my fridge like mirin and sake. So I guess my featured dish today can be an 'fusion' dish of sorts - a Chinese method of cooking accented with Japanese flavours.
Definitely simplicity at its' tastiest!

Stir-fried Rice Noodles Recipe
Beef with Chinese Boy Choy Stir-fry Recipe
Ingredients:
1/2 pound worth of pork cubes
3 cloves garlic, sliced
2 red chilli peppers, sliced (substitute with bird's eye chilli peppers if you want more spice)
2 tbsps of light soy sauce
2 tsp sugar
1 tsp mirin
1 tbsp sake
1 tsp cornstarch
2 stalks green onions for garnish (optional)
Method:
First, heat about 1 tbsp of oil in your pan. Once hot, place the garlic and chilli pepper slices and stir-fry briskly. Turn the heat to medium almost immediately. Once fragrant, place the pork cubes and stir-fry around quickly as well. Next, add the light soy sauce, sugar, mirin and sake into the wok. It's not really necessary to add water as there was enough moisture from the pork itself. Once the pork is cooked, do a taste test and add more sugar or soy as needed. Finally add a teaspoon of cornstarch to thicken the sauce - you can totally skip this step if you wish. Serve hot with steamed rice.

I have never used mirin in my cooking - I don't believe we even have it in the pantry. Reading your last couple of posts, you tossed some in your cooking.
It must be giving the dishes some really interesting taste. I would like to get some if I can spot any in the grocery.
