I love cooking and so far apart from my mom, no one has actually cooked for me that is until my boyfriend, F. I am a huge fan of fried rice and after tasting my boyfriend's yummy fried rice, I wanted to share his simple recipe with you, my dear readers. This is a spicy and appetising fried rice made simply with shallots, chili peppers, anchovies and onions. F's tip is to add some butter to the dish instead of just using oil. The small amount of butter adds to the richness of the anchovies and really takes the dish up a few notches.
Do give this a try the next time you feel like some fried rice!

Serves 2
Ingredients:
2 cups day old rice
1 tablespoon butter
2 shallots or onions , sliced and pounded
1/2 cup anchovies, rinsed
1 tablespoon soy sauce
1 teaspoon white pepper
6 bird's eye chili peppers
2 eggs, beaten
2 stalks green onions, sliced (for garnish) - optional
Method:
Firstly, heat up your wok until almost smoking. Add 2 tablespoons oil and turn heat to low. Add anchovies and fry until desired level of crispiness. Add butter. Add onions or shallots and chili peppers. Fry utnil aromatic. Add rice and soy suace. Coat rice well. Push rice to the sides of your wok and add eggs in the middle. Coat the rice with the eggs well. Do a taste test and add more soy or salt as preferred. Add white pepper. Dish out and garnish with green onions if desired.
