Happy National Day fellow Malaysians! For today, I am presenting a very easy chicken dish. Chicken flavoured with spicy ginger and made more fragrant by Chinese shaoxing wine. Flavoured with chicken and abalone sauce, this is an extremely flavourful dish - you can also add some shiitake mushrooms for extra texture. When I am at a loss on what to cook, a gingery chicken dish is always dependably delicious.
This chicken and abalone sauce from Yuen Chun is a favourite of mine, very versatile and adds a great deal of flavour to a great variety of dishes. Time really flies, and I just realised that I have been working with Yuen Chun for more than 2 years on this blog. If you have been following this blog, Yuen Chun products have been in my household since the time of my late maternal grandmother or 'popo'. I'm sure she would approve if she knew today that I have an opportunity to work with her favourite products!

Today's feature is a classic favourite, home made spring rolls filled with crunchy and colourful vegetables. For my spring rolls, I usually cannot do without jicama - the white and crunchy vegetable with a natural sweetness. You know, although I love cooking it's still really good when someone else prepares a meal for me and I guess I'm lucky in that apart from mom, my SO also loves cooking. Apparently, my cooking has spurred and renewed his love for cooking, and he's also a fan of my blog :).
Alright, that was pretty random. Whenever I have spring rolls, a spicy dipping sauce is a must. It's like the icing on the cake. Yes, you can definitely do without it but it feels like something is missing without it. For today, my filling was pretty simple - carrots, jicama, cucumber and some rice noodles. Remember to fry your spring rolls on medium heat and to be patient to avoid burnt rolls!

Abalone Sauce Steamed Chicken Recipe

Instead of a stir fry, today's poultry dish is simply steamed in a savoury and yummy marinade - then served with an abalone sauce mixture on top. I had limited vegetables on hand so I used the trusty green onion but you can also serve this with refreshing cucumber slices, crisp lettuce or choy sum. For steamed chicken dishes, it is rather important to use chicken of relatively higher quality - for this dish bone-in chicken is definitely preferred.
