Tangy, refreshing and utterly appetising. Yes, that is today's feature. This is such an easy dish to serve that goes well with steamed rice or as a side dish with meat. It is not easy sometimes to think of what to cook and this salad is such a great alternative to actual cooking. All you have to do is just some chopping, slicing and mixing :). I used fresh pineapple, cucumber, bird's eye chili peppers and some red onions. Add in some vinegar, fresh lime juice, a sprinkling of salt and sugar...that's it!
This will make a great party dish as well, just make sure to mix everything up right before serving to keep the dish fresh!

Ingredients:
1/2 pineapple, sliced (I used Dole)
1 cucumber, thickly slivered
1/4 red onion, sliced
3 bird's eye chili peppers, sliced (remove seeds for less heat)
Dressing:
4 tablespoons white vinegar (I used Yuen Chun's)
Sprinkle of salt
1 teaspoon of sugar or to taste
Fresh lime juice
Crushed peanuts (optional)
Method:
Place the sliced pineapple, cucumber and onion with the peppers in a large bowl for mixing. Add the dressing. Toss well to coat. Add the crushed peanuts if you like. Serve.
