Tofu with Minced Chicken Recipe

It's a new year! I hope you all had a good new year's celebration.  After this new year, yeah - the Chinese population will be looking forward to our Lunar New Year! :)  Like most people, I admit I overindulged during the celebratory seasons so today's feature is a rather 'healthier' dish made with tofu (protein!) and minced chicken (more protein).  A very easy stir-fry that goes perfect with rice.



This recipe is part of my Yuen Chun Recipes.


Ingredients:

2 slabs of firm tofu (use the marinated ones), sliced and pan fried 
1/2 cup of minced chicken or pork
4 cloves garlic, smashed
3 stalks green onions, sliced (green parts for garnish)
1 sprig of cilantro (optional), sliced
2 slices ginger
1 tablespoon light soy sauce (I used Yuen Chun's)
1 tablespoon abalone sauce (as above)
Dash of white pepper
Dash of Shaoxing Wine


Method:

Firstly, heat up your wok until almost smoking.  Turn heat to low.  Swirl to coat.  Add garlic, white parts of green onions and ginger.  

Once fragrant, add in pan-fried tofu.  Add in minced chicken.  Add soy sauce, abalone sauce and a dash of white pepper and Shaoxing rice wine.  Turn heat to high and pan-fry for about a minute.  Add about 2-3 tablespoons of water.  Turn heat to low and cover for another 2 minutes.  

Make sure chicken is cooked then dish out.  Sprinkle green onions and cilantro on top.  Serve hot with rice.
