There's nothing easier (and also delicious) than some cooling pasta salad! So easy to whip up, great as a side dish but this has been known to be the main course for someone I know. Hmm...
Anyway, pasta salad does not require much introduction I believe - I love to use the Japanese mayonnaise though but if you are up to it, try making homemade mayo for your pasta salad!
This recipe is part of my Yuen Chun Recipes.
1 packet pasta of your choice (usually macaroni or fusilli)
2 tablespoons of white vinegar (I used Yuen Chun's)
1 teaspoon sugar
Mayonnaise, enough to coat pasta well
6 sausages, sliced
1 packet of raisins
Cook pasta according to packet directions. Set aside in a large mixing bowl. Add the rest of the ingredients above and mix well to coat. Do a taste test and add more vinegar if desired. Allow to cool to room temperature before refrigerating.
