I noticed you only made mention of the pickled radish and didn't include it in your recipe. Kimbap was a staple around my house growing up (my mother being Korean) and, to me, it just isn't kimbap without the radish to give it that utterly delicious, distinctive flavor.

I miss living in Korea. Kimbap Cheonguk, although the McDonald's of kimbap to some, was great.

Haha, I love how this post panned out. When I started reading the first paragraph I thought 'hey, isn't this sushi?' then I read your second paragraph. Then I thought, 'hey, isn't this Korean sushi then?' then I read the last sentence of your second paragraph. Now I finally know it's Kimbap!
