There's a little restuarant in a small shopping center in Georgetown just outside Washington, DC and they serve little chinese pancakes and chinese food, the best I ever tasted. The chinese pancakes look like real pancakes but have some type of vegetables cooked on top of them, they taste sweet and delicious, I said I would just eat one but I ended up eating all three that I had and the chinese fried rice was delicious also, one of the things I miss most about that cute little shop down around the Georgetown area.

Hi there, based on what I know I think most Chinese pancakes use water instead of milk (correct me if I'm wrong), I'm not sure why either - you may be right on the crispy part..:)
