Hi Jen, thanks for the recipe, it was very good! My husband normally does not like eggplant, but liked this dish. Definitely agree that minced pork gives the perfect texture and the cook time was just right. Reminds me of my Vitenamese mom's cooking, love it! Thanks Wendy, I think it's best to pan-fry the salted fish bits first till fragrant and slightly crunchy, then add it in after you saute the ginger/ garlic till aromatic. I hope that helps! Do note that if you add salted fish, remember to adjust the rest of the seasoning accordingly! Pls let me know if you have any more questions :)
