Baked Dory Fish with Lemon Garlic Sauce Recipe

Grilling fish is one of the easiest delicious dishes you can whip up in a short span of time in my opinion.  So when I spotted some dory fish fillets at the local grocery store I thought they would be great grilled combined with a lemon garlic sauce.  The fish fillets were simply marinated with some salt, pepper and olive oil before being grilled in the oven.  I served the fish with an easy lemon and garlic sauce that consisted of red wine, shallots, garlic, lemon and butter.  For today, I made some pasta to go with the fish but if you prefer potatoes, do check out my 'perfect' roasted potatoes for another alternative.

Grilled Dory Fish with Red Wine Garlic Sauce

I have to admit something though - as usual I had my little 'studio' all set up with all the props in place and I was just waiting for the fish to be cooked. Once everything was set up, I just realised that I forgot to charge my camera's battery!  So, I'm a little embarassed to admit that these photos were shot with my trusty iPhone 4S - oh well, I thought it was better than not shooting anything :P.

Grilled Dory Fish with Red Wine Garlic Sauce

Serves 4

Ingredients:

4 dory fish fillets, rinsed and patted dry
Salt & Pepper for seasoning
Olive oil for brushing

Sauce:

Zest and juice of 1 lemon
125g salted butter
1/2 cup red wine (or white)
3 shallots, sliced
3 garlic cloves, minced
Bunch of Italian parsley.

Grilled Dory Fish with Red Wine Garlic Sauce

Method:

Prepare the sauce first.  Heat the wine, shallots and garlic until boiling.  Turn heat to low and allow to simmer under the mixture is reduced by half.  Turn heat off and stir in the butter slowly until totally incorporated.  Add parsley.  Set aside.

Pre-heat the oven to 200 C.  Prepare a tray for baking the fish in the middle of the oven.  Line the tray with foil and lightly brush with olive oil.  Place the fillets on the tray.  Sprinkle with salt and pepper and lightly with olive oil.

Bake for about 20 minutes or until fish is fully cooked.  Serve immediately with the sauce and side dishes of your choice.
