Chinese Loofah with shrimp stir-fry recipe (Wordless Wednesday)

This post is part of my Yuen Chun Recipes.

Ingredients:

3 loofahs, skin removed
1 cup of small sized shrimp, cleaned
3 tablespoons cooking oil
3 cloves garlic, minced 
1 cup chicken broth
Dashes of light soy sauce (I used Yuen Chun's)

Method:

Firstly, heat up wok until almost smoking.  Add cooking oil, swirl to coat.

Turn heat to low, add garlic, fry until fragrant.

Add dash of soy sauce, add shrimp.  Add in vegetables.  Turn heat to high.  Stir around briskly, add in chicken broth and another dash of light soy sauce.  Turn heat to medium and cover allowing to cook until loofah is soft (about 5-9 minutes).  Remove cover, do a taste test and add more soy if needed.

Serve hot with steamed rice.  You can also add in softened glass noodles if you like after the loofah starts softening.
