Grean beans and Roasted Pork (siu yuk) Stir-fry Recipe

This is a great recipe to use up leftover roasted pork if you have any.  Crunchy green beans stir-fried simply with garlic, some soy and fragrant sliced roasted pork - a winner in my books.  You can use snake beans or french beans in this recipe as well.  A stir-fry is just so easy and simply satisfying served with hot steamed rice.  We have been cooking brown rice instead of white rice in the interests of healthier eating - so I feel like I can indulge in stir-fries (relatively) sinlessly!

This recipe is part of my Yuen Chun Recipes.

Ingredients:

12 pieces roast pork, sliced
1 bundle of green beans, sliced angularly (blanched in hot water for a few minutes)
4 cloves garlic, roughly chopped

1 tablespoon light soy sauce (I used Yuen Chun's)
Dash of sesame oil (optional)

Ingredients:

Firstly, heat up wok until almost smoking.  Add 4 tablespoons oil and swirl to coat.

Turn heat to low.  Add garlic fry till fragrant, add soy sauce.  Immediately add in the roast pork and green beans.  Stir around briskly to mix.  Add about 4 tablespoon of water and turn heat to medium.  Cover for about 5 minutes.  Remove cover, turn heat to high and stir around briskly for another 1-2 minutes.

Dish out and serve hot.
